Healthy Peanut Butter Chocolate No-Bake Cookies

 
I've been trying to eat less sugar lately, but I still need to satisfy my sweet tooth every now and then.

Enter these Healthy Peanut Butter Chocolate No-Bake Cookies that are honestly insane. I don't know how they taste as good as they do with healthier ingredients, but I'm all in!

They start with a peanut butter chocolate oat mixture on the bottom and then you pour on a warm peanut butter topping. Once they set up, they have the perfect texture and the taste is too good to be true.

Healthy Peanut Butter Chocolate No-Bake Cookies 

Makes 12 Cookies

6 Tbsp. coconut oil, divided

¼ cup + 2 Tbsp. natural peanut butter, divided

¼ cup + 1 Tbsp. maple syrup, divided

¼ cup Dutch process cocoa powder or cacao powder

1 tsp. vanilla extract

1 pinch kosher salt

1 cup old-fashioned oats


1. Place 12 paper or silicone muffin liners into a muffin tin.

2. In a small saucepan over low heat, melt 5 tablespoons coconut oil and stir in 2 tablespoons peanut butter, 1/4 cup maple syrup, 1/4 cup cocoa/cacao powder, 1 teaspoon vanilla extract and 1 pinch kosher salt. Whisk until smooth and remove from heat. Stir in 1 cup rolled oats.

3. Spoon 2 tablespoons into muffin liners. Refrigerate while making the peanut butter topping.

4. In a small saucepan over low heat, stir together 1/4 cup peanut butter, 1 tablespoon maple syrup, and 1 tablespoon coconut oil. Spoon 1 tsp. of the peanut butter mixture over each cookie. Freeze for 15 to 20 minutes until set or refrigerate until serving. Store covered in the fridge.
