Roasted Parmesan Zucchini
This wasn't the best zucchini year in my garden, but we were still able to get some good ones! I found this recipe and it's now my favorite way to cook zucchini when it comes to serving it as a side. It's perfectly seasoned, roasted and that parmesan cheese on top makes it extra good! If you have a couple of zucchini you need to use, this is a great way to do that! So easy and delicious.
Roasted Parmesan Zucchini
2 medium sized zucchini, cut into 1/2 inch rounds
1/2 cup grated parmesan cheese
1 tsp. garlic powder
2 Tbsp. olive oil
3/4 tsp. kosher salt
1/2 tsp. black pepper
1. Preheat oven to 450°F. Grease a baking sheet with cooking spray and set aside.
2. In a small bowl, combine the salt, black pepper and garlic powder. Set aside. In a large bowl, toss the zucchini with the olive oil. Sprinkle the zucchini with the spice mix until evenly coated.
3. Arrange on a baking sheet into an even layer. Sprinkle each slice with grated parmesan cheese and bake for 5 minutes. Broil the zucchini for 2-3 minutes or until cheese is golden brown. Be sure to watch carefully so it doesn't burn.
