Eggnog Biscoff Ice Cream
I have to make different eggnog desserts every year because no matter if you like to drink eggnog or not, it is amazing in desserts! This is my first year making eggnog ice cream and it tastes just like Christmas to me. I made this Biscoff Cookie Butter Ice Cream a few years ago and I thought the Biscoff cookies would go perfectly with the eggnog. I was right! This ice cream is so creamy and the Biscoff cookies make the perfect bite. You could also leave out the Biscoff cookies and drop a scoop of the ice cream in some Sprite for a delicious holiday float!
Eggnog Biscoff Ice Cream
2 cups eggnog
1 cup half and half
1/2 cup sugar
1 tsp. pure vanilla
1/2 tsp. nutmeg
10 Biscoff cookies, broken into bite-sized pieces
1. Combine all ingredients in a bowl or pitcher and whisk until sugar is dissolved.
2. Pour into ice cream maker and freeze according to manufacturer's instructions.
3. In the last few minutes of churning, gradually add in the Biscoff cookie pieces and continue churning until incorporated.
4. Transfer the ice cream to a bread pan or large airtight container.
5. Press a piece of plastic wrap on top to prevent freezer burn. Cover and freeze until the ice cream is firm for at least 4 hours or overnight. Let thaw for 10 minutes before serving, if needed.
