Simple Greek Salad
I am all about anything Greek and this salad has all the wonderful flavors of Greek food without the hassle. The tomatoes, onions and feta make the perfect combo with the simple yet flavorful dressing. This salad is so fresh and delicious and is the perfect way to use up any garden tomatoes you may have left. Have it as a side salad or add some grilled chicken and make it into a great main dish.
Simple Greek Salad

For the Dressing:
1/3 cup red wine vinegar
1/2 cup olive oil
1 tsp. dried oregano
1 tsp. dried basil
1/2 tsp. ground mustard powder
1 tsp. sugar
2 tsp. garlic, minced
Salt and pepper, to taste
For the Salad:
1 bag of spinach leaves
1 cup grape tomatoes, chopped
1/2 small onion, thinly sliced or chopped
1/2 cup crumbled feta cheese
1. In a small bowl, whisk together ingredients for dressing. Set aside.
2. In individual or a large bowl, toss together ingredients for salad. Toss salad with desired amount of dressing.
