Virgin Pina Colada
The first time I tried a virgin pina colada was in Cancun when I was in high school and I became obsessed. We were staying at an all-inclusive resort so I had all the pina coladas my little heart desired. I have no idea why it took me so long to make try them at home, but I think I never thought it would be as good as they were in Mexico. Boy, was I wrong!
These are not only extremely easy to make, but they are DELICIOUS. And it has been so hot here in Utah that I think I might need to make these every day this week. They only call for 3 ingredients and the result is magic. You've got to try them!
Virgin Pina Colada
Makes 4 servings
8 oz. cream of coconut (I used Coco Lopez. It's found in the alcoholic mixer section.)
8 oz. pineapple juice
4 cups of ice
1/2 tsp. rum extract, optional
1. Combine cream of coconut, pineapple juice, ice and rum extract in a blender.
2. Mix until smooth, about 30 seconds or longer.
3. Serve immediately and garnish with fresh pineapple if desired.
