Small Batch Spiced Granola

My husband and I are the only ones that eat granola in our house so I love the idea of small batch granola! Homemade granola tastes SO much better than store-bought and is so much better for you, too. I think some people are intimidated about making their own, but it comes together in no time at all. This granola has the perfect amount of spice and crunch. I absolutely love it!
My favorite way to eat it is on top of some plain greek yogurt, with strawberries, dark chocolate chunks and a generous drizzle of honey. You have got to try it! It's one of the best healthy snacks that is extra filling, too and there are so many topping possiblities.

Small Batch Spiced Granola

2 cups old-fashioned oats
2 Tbsp. lightly packed brown sugar
1/2 tsp. ground cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt
3 Tbsp. pure maple syrup
2 1/2 Tbsp. coconut oil, melted
1/2 tsp. pure vanilla extract
1/3 cup unsweetened flaked coconut

1. Place a rack in the center of the oven and preheat oven to 350 degrees F. Line a small rimmed baking sheet with parchment paper and set aside.
2. In a medium bowl, toss together oats, brown sugar, cinnamon, nutmeg and salt.
3. In a small bowl, whisk together maple syrup, coconut oil and vanilla extract. Add the wet ingredients to the dry ingredients and toss until all of the oat mixture is coated in moisture.
4. Spread in an even layer on the prepared baking pan and bake for 10 minutes. Remove from the oven, stir and bake for another 10 minutes. Remove from the oven and toss in the coconut flakes and bake for 10 minutes until everything is golden brown.
5. Remove from the oven and allow to cool completely before storing or serving. Serve over plain or vanilla greek yogurt with berries, dark chocolate chunks and a generous drizzle of honey, if desired.

*Store in an airtight container at room temperature.
