Banana Bread Snack Cake
We love banana bread and muffins at our house so I'm always trying to find new recipes that use bananas! This snack cake is unreal. It's so easy to make and the sugar topping makes the top of the snack cake so crackly and delicious. I think sugar needs to be put on every single homemade banana bread!

Banana Bread Snack Cake
Adapted from Let’s Dish Recipes
1/2 cup (1 stick) butter, melted and cooled
1 cup packed brown sugar
2 eggs
2 tsp. vanilla extract
4 very ripe bananas, mashed
1 3/4 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped pecans or old-fashioned oats for a nut-free version
1/4 cup granulated sugar for topping
1. Preheat oven to 350 degrees F. Spray an 8 or 9-inch square baking pan with nonstick baking spray or line with parchment paper and set aside.
2. With an electric mixer, beat together the butter, brown sugar, eggs and vanilla until well blended. Mix in the bananas until well combined.
3. In a medium bowl, whisk together the flour, baking soda and salt. Add the dry ingredients to the wet ingredients and stir until just combined. Stir in the pecans or oats.
4. Pour the batter into the prepared pan. Sprinkle the sugar evenly over the top.
5. Bake for 40-50 minutes or until a toothpick comes out clean when inserted into the center. Let the bread cool slightly in the pan on a rack for 5 minutes. Cut into squares to serve.
