Chocolate Strawberry Energy Bites
I love to have easy, healthy snacks on hand especially when I'm craving something sweet and these Chocolate Strawberry Energy Bites totally hit the spot! They are so creamy and delicious and taste like a chocolately, peanut butter and strawberry jam sandwich. They come together in no time at all and store really well in the fridge or freezer.
These are great to have during the holiday season when you need something a little healthier than candy, cookies, pie, etc. These peanut butter bites and these coconut almond bites are also fantastic!

Chocolate Strawberry Energy Bites
Makes 15 energy bites
3/4 cup all-natural creamy peanut or almond butter
1/3 cup honey or pure maple syrup
1 tsp. vanilla extract
2 Tbsp. cocoa powder (I used Dutch process cocoa)
1 cup old-fashioned oats
1 cup freeze-dried strawberries, coarsely chopped
1. Add the peanut butter, honey or syrup, vanilla and cocoa powder in a large bowl and whisk until combined.
2. Pour in the oats and strawberries and stir until completely combined.
3. Place bowl in the freezer for 20 minutes to set up.
4. Remove bowl from freezer and form mixture into balls using a cookie scoop.
5. Store in a sealed container in the fridge for up to 2 weeks or in the freezer for up to 3 months.
