Oatmeal Cookie Butter Chocolate Bars

Cookie butter is easily one of my favorite inventions and I think it is completely irresistible. I've stuffed it into all sorts of desserts and honestly love eating it by the spoonful. These Oatmeal Cookie Butter Chocolate Bars are out of this world. The oatmeal layers are perfection and they're made even better with a layer of gooey cookie butter and melted chocolate. These are so easy to make and will be gone in seconds. Be sure to take them to your next get together!


Oatmeal Cookie Butter Chocolate Bars

3/4 cup (1 1/2 sticks) unsalted butter
3/4 cup brown sugar, packed
1 cup old fashioned oats
1 1/2 tsp. vanilla extract
1 tsp. baking soda
1 cup white flour
1 cup cookie butter spread (Biscoff)
1 cup semisweet chocolate chips
pinch of kosher salt

1. Preheat the oven to 350 degrees F. Spray an 8x8-inch pan with non-stick cooking spray and line with parchment paper. Set aside.
2. In a large bowl, melt butter with a few chunks of butter left unmelted. Add in the brown sugar, oats and vanilla. Whisk until well combined.
3. Stir in the baking soda and flour and mix until combined.
4. Take half of the oat mixture and press it firmly into the bottom of the prepared pan.
5. Bake for 10-12 minutes or until lightly browned at the edges.
6. Meanwhile, place the cookie butter spread in a microwave-safe bowl and microwave for 30 seconds.
7. When the bottom layer is done baking, remove and sprinkle the chocolate chips onto the crust. Sprinkle kosher salt evenly on top.
8. Pour the cookie butter evenly over the chocolate chips. Sprinkle the remaining oat mixture on top.
9. Bake for another 15 minutes or until lightly browned at the edges.
10. Remove and allow to cool completely before cutting.
