Healthier Chocolate Fudge Bars
It took me a lot of time to figure out what to call this dessert because they were originally called healthy brownies, but they just don't remind me of brownies at all. Honestly I think they're better than brownies and I could eat this dessert all the live-long day. This healthier dessert is so fudgy and absolutely amazing with fresh strawberries on top. I really think I could eat a serving of this every day and be happy. In other words, make this ASAP.
Healthier Chocolate Fudge Bars
Adapted from Joy Food Sunshine
1/4 cup almond or oat flour
1/4 cup unsweetened cocoa powder
1/4 tsp. kosher salt
1/2 cup semisweet chocolate chips
2 Tbsp. coconut oil, melted
1/2 cup granulated sugar
3/4 cup Vanilla Greek yogurt
2 large eggs
1 tsp. vanilla extract
1/4 cup semisweet chocolate chips, to mix in
Chocolate Ganache
1/2 cup semisweet chocolate chips
1/4 cup heavy cream
1/4 tsp. vanilla extract
1. Preheat oven to 350 degrees F. Grease an 8x8-inch baking dish and set aside.
2. Mix almond flour, cocoa powder and kosher salt in a small bowl; set aside.
3. Melt chocolate and coconut oil together in the microwave for 30 seconds. Mix until completely melted.
4. Whisk in sugar, Greek yogurt and vanilla. Whisk in eggs, one at a time until the batter is completely smooth.
5. Add dry ingredients, whisk until just incorporated. Stir in chocolate chips.
6. Pour batter into prepared pan and bake for 30 minutes or until the top is just barely set and the edges are slightly pulling away from the sides of the pan.
7. When bars have finished baking, place the pan on a wire rack to slightly cool.
Make the Ganache:
1. Place chocolate in a medium microwave-safe bowl and heat on high power for 30 seconds to soften chocolate; set aside.
2. In a small microwave-safe bowl or measuring cup, heat the cream on high power just until it begins to bubble and shows signs of boiling, about 30 seconds.
3. Pour hot cream over chocolate and let stand 1 minute. Whisk vigorously until chocolate has melted and mixture is smooth and velvety. Add vanilla and whisk to combine. Set bowl aside for about 5 minutes, allowing ganache to cool and thicken a bit.
4. Once the ganache is slightly cooled, pour it over your cooling bars.
5. Place in refrigerator until cooled completely. Cut into bars and serve.
*Store in the fridge for up to a week.
