Chicken with Amazing Peanut Sauce
This peanut sauce you guys! It is amazing on this chicken, but you could honestly dip anything in it and it would taste good. (Well, almost anything.) Anyway, this sauce is made in the blender and is so easy to whip up. It's a flavor you'll be craving forever after you try it!
Serve this peanut chicken on top of some white rice and roasted broccoli and you've got yourself an easy weeknight meal that's perfect for summer!

Chicken with Amazing Peanut Sauce
Adapted from Pinch of Yum
1-2 boneless chicken breasts, cut into bite-sized pieces
1/2 Tbsp. olive oil
1/2 cup peanut butter
1/3 cup low sodium soy sauce
1/3 cup sesame oil
1/4 cup rice vinegar
2 Tbsp. red curry paste
2 Tbsp. sugar
1 tsp. ground ginger
1 tsp. garlic, minced
1. Blend all the sauce ingredients together in a small blender or food processor until smooth and creamy. Set aside.
2. Pour olive oil into a large skillet and heat over medium-high heat. Place chicken pieces in pan and cook on both sides until chicken is no longer pink. Drain any juices from pan and remove from heat.
3. Pour in peanut sauce and stir until coated. Serve over white rice and roasted broccoli if desired.
