Beef Taco Cups
Yay for my first post in 2019! Still can't believe it's already a new year, but I do love fresh beginnings. This is the perfect recipe for the new year because it's the easiest dinner or appetizer and everyone will love it!
If you've never made tortilla cups before, you've got to try them! I have these pizza and six-layer taco versions that are so yummy. I decided to try out my favorite taco meat in some tortilla cups and it was the best idea ever. The tortillas get so crispy and the meat is the best taco meat you'll ever have! These would also make the perfect Super Bowl party food. Just saying. ;)

Beef Taco Cups
Makes 20 cups
1 lb. extra-lean ground beef or turkey
2 tsp. dried onion flakes
1 1/2 tsp. garlic, minced
2 Tbsp. chili powder
1 tsp. cumin
1 tsp. salt
5 flour tortillas, cut into fourths
1 1/4 cups Mexican style shredded cheese
sour cream/greek yogurt, lime juice, cilantro, tomatoes for topping
1. Preheat oven to 400 degrees F. Spray 2 (12-count) muffin tins with non-stick cooking spray.
2. Hand mix the spices with the ground beef and cook in a large skillet, breaking it up with a spatula, until no longer pink.
3. Using the cut tortilla pieces, press one into each cavity. (The edges will stick up unless you want to trim them.)
4. Drop 2 tablespoons of the ground beef into each tortilla cup followed by 1 tablespoon of cheese.
5. Bake in preheated oven for 8-10 minutes or until cheese is melted and tortilla edges are lightly browned. Serve warm and garnish with desired toppings.
