Mint Hot Chocolate Cookies
I've been dying to make a version of these cookies for years and finally got around to it. I've been on a baking kick this holiday season and I can't get enough! These cookies can easily be adapted to chocolate only if you're not a mint fan, but I love the way the mint compliments the hot chocolate flavor. Plus, mint chocolate is my husband's favorite flavor so these were a definite win at our house!
These cookies are best served straight out of the oven, but if they cool completely just warm them in the microwave for 15-20 seconds so they're nice and gooey again!

Mint Hot Chocolate Cookies
Adapted from Handle the Heat
Makes 24 Cookies
1 1/2 cups flour
1/3 cup hot chocolate mix (I used Stephen’s Milk Chocolate)
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 stick unsalted butter, at room temperature
1/4 cup granulated sugar
1/2 cup light brown sugar
1 large egg
1 large egg yolk
1/2 tsp. vanilla extract
1/2 cup milk chocolate chips
1/2 cup mint chips (I used the Guittard brand)
12 large marshmallows, cut in half
1. In a medium bowl, stir together the flour, hot chocolate mix, baking powder, cinnamon and salt.
2. In bowl of a stand mixer, add the butter, granulated sugar and brown sugar. Using the paddle attachment, beat on medium-high speed until well-combined and smooth, about 2 minutes. Add the egg and egg yolk and beat until combined. Add the vanilla extract.
3. On low speed gradually add the flour mixture. Fold in the chocolate and mint chips with a rubber spatula. Chill for about 30 minutes in the fridge.
4. Meanwhile, preheat the oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.
5. Using a cookie scoop, drop 1 1/2 Tbsp-sized balls of dough onto the prepared baking sheets.
6. Bake for 10 minutes. Remove from oven and top each cookie with 1 marshmallow half, sticky side side up. Return to oven and continue to bake for another 4 minutes, or until the marshmallow begins to melt slightly.
7. Place the cookies under the broiler for about 30 seconds or until marshmallows are toasted. Be sure to watch the entire time and rotate the pan as needed so the marshmallows don’t burn.
8. Let cool on baking sheets for 5 minutes before removing to wire racks to cool.
*Serving the cookies warm is suggested since the marshmallows will harden. If cookies have cooled, heat in the microwave for 15-20 seconds before eating.
