Grilled Chicken Cordon Bleu with Dijon Vinaigrette
I think this was easily one of my favorite meals this summer. I cannot tell you how delicious this was. I could easily drink the sauce by itself. It is so good! And I loved the lightness of the grilled chicken instead of the traditional breaded chicken cordon bleu.

Grilled Chicken Cordon Bleu with Dijon Vinaigrette
Adapted from Let’s Dish
4-6 boneless, skinless chicken breasts

salt and pepper
4-6 slices deli ham
4-6 slices Swiss cheese
1/4 cup white wine vinegar
1/4 cup olive oil
2 Tbsp. Dijon mustard
1 Tbsp. onion flakes
1/2 tsp. white sugar
dried or fresh chives, for garnish
1. Preheat grill to medium-high heat. Brush chicken breasts with oil and season with salt and pepper.
2. Prepare vinaigrette by whisking together vinegar, olive oil, mustard, onion flakes and sugar. Season with salt and pepper, to taste.
3. Grill chicken until cooked through, about 4-5 minutes per side. Top each chicken breast with ham and cheese and reduce heat to medium low. Cover and grill for an additional 1-2 minutes, or until cheese melts.
4. Drizzle vinaigrette over chicken and garnish with chopped fresh chives. Serve immediately.
