Chicken Tikka Masala
I've been making this Chicken Tikka Masala for a while now, but I'm just finally getting around to sharing it. I love easy and delicious meals like this that not only taste good, but are filling, too.
This dish is perfect for summer because you get to use your grill and only have to make a simple sauce on the stove.

Chicken Tikka Masala

Marinade
1/2 cup yogurt
1/2 Tbsp. lemon juice
1 tsp. cumin
1/2 tsp. cinnamon
dash of cayenne pepper
1 tsp. pepper
1 tsp. ginger
1/2 tsp. salt
2 chicken breasts, butterflied
Sauce
1 Tbsp. butter
1 tsp. garlic
1 small jalapeño, finely diced
2 tsp. cumin
2 tsp. paprika
1/2 tsp. salt
1 (8 oz.) can tomato sauce
1 cup cream
1/4 cup chopped cilantro
1. Combine all marinade ingredients in a large bowl and add chicken breasts; stirring to coat. Refrigerate for at least 1 hour.
2. Heat grill to 400 degrees F and grill each side for 5 minutes, turning once. Discard marinade.
3. While chicken is on the grill, melt butter in a large skillet over medium heat. Sauté garlic and jalapeño for 1 minute. Season with cumin, paprika and salt.
4. Stir in tomato sauce and cream. Simmer on low until sauce thickens, about 20 minutes.
5. Slice the grilled chicken and stir into sauce. Simmer for 10 more minutes.
6. Serve over rice and garnish with cilantro.
