Strawberry Bacon Salad with Strawberry Jam Dressing
Now this is one of those salads that I just can't wait to share with you guys. I've always wanted to make a strawberry dressing, but thought it would be too much work. Then I found this recipe for strawberry jam dressing and it was so easy!
This dressing comes together in no time and it's easily some of the best I've ever had. I mean what's not to love about strawberries??
The dressing complements the saltiness of the bacon and parmesan and goes perfectly with the heat of the red pepper and onion.

Strawberry Bacon Salad with Strawberry Jam Dressing
Adapted from The Girl Who Ate Everything
Dressing:
2 Tbsp. red wine vinegar
3 Tbsp. sugar
1/2 cup canola oil
1/2 tsp. dry mustard
1/2 tsp. salt
1/2 cup strawberry jam
Salad:
2 (10 oz.) bags chopped romaine lettuce
1 red bell pepper, chopped
1/2 purple onion, sliced
1 cup sliced strawberries
6 strips bacon, cooked and crumbled
1/3 cup shredded parmesan cheese
For the dressing:
1. Add all of the ingredients to a blender and blend until smooth. Chill in the refrigerator until ready to use.
For the salad:
1. Toss the lettuce, red pepper, onion and strawberries with the dressing right before serving. Add the bacon and parmesan and toss until evenly distributed.
