Coconut Almond Energy Bites
Adapted from Belle of the Kitchen
1/3 cup coconut oil, melted
1/3 cup honey
1/2 cup almond butter
1 tsp. vanilla extract
2 cups old fashioned oats
2 cups old fashioned oats
1 cup coconut flakes
1/4-1/2 cup mini or regular chocolate chips
1/4 cup ground flaxseed, optional
1. Combine coconut oil, honey, almond butter and vanilla extract in a large mixing bowl. Whisk until combined. Add in oats, coconut flakes, chocolate chips and flaxseed. Mix until well coated.
2. Transfer bowl to the freezer for 20 minutes so mixture is easier to work with. Remove and using a cookie scoop, form mixture into balls. You will need to pack the ingredients together well in your hands before you shape it into balls.
3. Place energy bites in an airtight container and store in the refrigerator or freezer.
