Coconut Curry Wonton Soup
Guys...this soup! It's really hard to explain the flavor of this broth without having you taste some, but let me tell you, it's amazing! So many good flavors and I love the addition of wontons.
I bought this bag of Chicken and Cilantro Wontons from Costco and really wanted to try them in a soup. I came across this recipe and knew it would be good. This soup would also be amazing with cooked chicken pieces or rice noodles. The possibilities are endless!

Coconut Curry Wonton Soup
Adapted from Cooking for Keeps
1 Tbsp. coconut oil
1/2 cup finely chopped onion
2 tsp. garlic, minced
2 Tbsp. red curry paste (I use the Thai brand)
4 cups chicken broth
1 (14.5 oz.) can coconut milk
3 Tbsp. packed brown sugar
1/2 tsp. ground ginger
1 1/2 tsp. salt
2 Tbsp. fresh lime juice
20 frozen chicken or pork wontons (I used this brand)
cilantro for garnish
1. Heat a dutch oven or large pot to medium heat. Add coconut oil. Once hot, add onion and garlic. Cook for 1 minute until fragrant and slightly translucent. Season with salt. Add curry paste, cook 1 minute. Whisk in chicken broth, coconut milk, brown sugar, ginger and salt. Bring a boil and reduce to a simmer for 10 minutes.
2. After 10 minutes, stir in lime juice. Add wontons and simmer 5 minutes until heated through.
3. Spoon 4-5 wontons into the bottom of each serving bowl and ladle broth on top. Garnish with cilantro.
