Potato Chip Chicken Fingers
Well it's been a while since I've posted, but things have been BUSY to say the least. We're in the process of buying a house, which we cannot be more excited about, and we also went to Jamaica with Jordan's work! Two things that are still blowing my mind actually. Jamaica was beautiful and I loved every minute of it. Of course I missed our baby, but it was really nice to spend some alone time. I definitely miss that 90 degree weather!
Before we left, we had these chicken fingers for dinner one night and they were a hit! This is another new favorite for my husband. They were just different enough and I'm pretty sure I found my new favorite chip.
The flavor of these is unreal and so addicting! They are perfect for these chicken fingers because they are extra crunchy. Go buy yourself a bag!
I also paired it with our favorite honey mustard dipping sauce and loved it! Such a good meal.

Potato Chip Chicken Fingers

3 cups potato chips of your
choice
1 egg
1 Tbsp. milk
2 chicken breasts, cut into
strips (or 3/4lb chicken tenders)
salt and pepper
honey mustard sauce, optional
1. Preheat oven to 400 degrees.
2. Crush potato chips in a food
processor or with your hands in the bag. Pour into a shallow dish or bowl.
3. Whisk together egg and milk in
a separate shallow dish or bowl.
4. Season chicken strips lightly
with salt and pepper then dunk into egg mixture. Allow excess to drip off then
roll in chip crumbs and place on a nonstick sprayed, foil-lined baking sheet.
Continue with remaining chicken then lightly spray tops with nonstick spray or
olive oil.
5. Bake for 20 minutes, flipping
halfway through.
I love your blog. I am a poor college student but find your recipes, simple but affordable. I'm a foodie and am excited to try these for dinner next week. Question though, what is the side you used?? Looks like an orzo pasta with broccoli but is there a recipe? Thanks!
