Grilled Summer Squash Pitas

 
I can't get over how good these Grilled Summer Squash Pitas are! It's such a simple vegetarian meal with so much flavor. Grilling the zucchini and yellow squash yields such an amazing flavor that makes the whole dish incredible. The pickled onions, feta and cilantro also add something special making it something I want to make on repeat. If you have a ton of zucchini or squash be sure to make this!

Grilled Summer Squash Pitas

1/2 red onion, very thinly sliced

Juice of 1/2 lemon

kosher salt

4 pitas

3 medium zucchini and/or yellow squash, sliced about 1/4-inch thick on an angle

4 Tbsp. extra virgin olive oil

1/2 tsp. garlic powder

1/4 tsp. red pepper flakes

1 1/2 cups shredded mozzarella cheese

1/2 cup crumbled feta cheese

1 cup cilantro


1. Preheat a grill to medium heat. Combine the red onion, lemon juice and a pinch of salt in a medium bowl; toss well. 

2. Combine the zucchini/yellow squash, 2 Tbsp. olive oil, 3/4 tsp. salt, 1/2 tsp. garlic powder and red pepper flakes in a large bowl; toss well to coat. Grill until well marked and tender, about 2-3 minutes per side. Remove to a plate.

3. Place pitas on a baking sheet and divide mozzarella cheese onto each pita. Broil for 1-2 minutes in the oven until the cheese is melted, watching carefully so it doesn’t burn.

4. Remove from oven and top pitas with zucchini/squash, pickled onions, feta and cilantro.
